A Process to Extend the Shelf Life of Fresh Cut Fruit and Vegetables



The process combines blanching, air drying, and supercritical CO2 treatment, with and without ethanol, to extend the shelf-life of fresh-cut vegetables and fruits at room temperature and under refrigerated conditions.
